I love recipes that require the least amount of washing up. So Bacon and Zucchini Pasta is terrific. One pot for pasta and one frying pan. That means a fast washing up and get to the lounge chair with.
Bacon and Zucchini Pasta

Ingredients
1 Zucchini-sliced
2 cups cooked pasta
2 Bacon-sliced
1.5 tbsp Fresh basil-chopped
0.25 cup Thickened cream
0.25 cup Chicken stock
1 Black pepper-freshly ground
1 Parmesan cheese-freshly grated
Directions
- In a frying pan, cook the bacon until crispy.
- Set on paper towel to drain. In the same pan remove the most of the bacon fat.
- Add the zucchini and cook until tender.
- Add the pasta and the cream, stock, and basil and let it simmer for 8 minutes until the sauce has reduced and thickened.
- Serve with grated cheese on top
Notes
- Bacon and zucchini pasta is not suitable for freezing. Is best made fresh before serving.

Quick to make. I think of this as another interpretation of carbonara. It went really fast and now making pesto with leftover basil. I will be adding this to my favourites. Thank you for receipe.
