Ingredients

  • 4 Apple-firm, crisp variety

  • .25 cup Brown sugar

  • .25 cup Maple syrup-or honey

  • .25 cup Sultanas

  • .25 cup Butter-chopped into pieces

  • .5 tsp Ground cinnamon

  • .5 tsp Ground ginger

  • .25 tsp Ground nutmeg

  • .5 cup Apple juice-cider can also be used

Directions

  • Preheat oven to 190 degrees.
  • In a small bowl, mix together the brown sugar, walnuts, sultanas, butter and spices.
  • Slice the top 2cm off each apple. Using a small spoon or a melon baller, scoop out the apple’s core and seeds. Don’t go all the way down as you’ll want to keep the bottom on them.
  • Set the apples out, cavity side up, in a glass or ceramic baking dish, allowing a little bit of room around each apple. Fill the apples with your spice mixture, and pop the lids on. Pour apple juice on and around the apples.
  • Bake for 30-40 minutes, or until apples are nice and tender. Rotate the baking dish halfway through. Feel free to baste throughout the cooking process with the pan’s juices.
  • Serve warm, drizzled with any remaining liquids in the pan.
