Ingredients

  • 230 gram Dessicated coconut

  • 110 gram Butter-melted

  • 250 gram Marie biscuits-crushed

  • 200 gram Condensed milk

  • 1 Lemon-juice and zest

  • Lemon Coconut Icing

  • 1.75 cups Icing Sugar

  • 3 tbsp Lemon juice

  • 15 gram Butter

  • 2 tbsp Dessicated Coconut

Directions

  • Mix all ingredients together (except the lemon icing) and press into a lined lamington tin.
  • Ice with lemon icing and sprinkle with some extra coconut.
  • Cut into slices and serve.

Notes

  • No Bake Lemon Slice is suitable to freeze for up to three months.

    can I ask why in the picture it looks like it has distinct layers yet in the method it’s mixed all together…

      I beleive the top layer is the Lemon coconut Icing =)

    This looks like pressed biscuit base, layer of coconut, layer of mixed lemon, condensed milk etc, with icing and coconut to top off. Can’t see it turning out like in the picture, otherwise.

    This should be 3 layers. Biscuit base consisting coconut, butter and biscuits, filling consisting condensed milk and lemon juice then the icing on top of that. If you mix the base and filling together you will end up with one very gluggy horrible mess.

        I meant the icing part. If using desiccated coconut, will the icing still be smooth?
