Ingredients
1 tbsp Butter-softened
2.5 tbsp Brown sugar
3 tbsp Plain flour
0.25 tsp Baking soda-just a pinch
1 and 1/2 tbsp Cocoa powder-or more to taste
1.5 tsp Instant coffee
2 tbsp Milk
3 tbsp Water
0.25 tsp Vanilla Essence
Directions
- Spray the inside of your chosen mug or grease with butter.
- Either in the mug, or in a bowl, add all of the ingredients and stir until completely combined.
- Make sure the inside rim of the mug is free from excess batter, wiping or required, and then pop in the microwave.
- Cook on high power until the cake has risen and looks moist, but not wet, on the top. Check it every 30 seconds, for 2-3 minutes. Watch carefully, as the cake becomes dry when overcooked.
- Allow to rest and cool before eating, topped with cream or ice cream.
