Ingredients

  • 500 ml strong brewed coffee (cooled)

  • 75 g caster sugar

  • 1 tsp vanilla extract (optional)

  • Whipped cream, to serve (optional)

Directions

  • In a bowl, stir sugar into hot coffee until fully dissolved. Let cool.
  • Add vanilla extract if using.
  • Pour coffee mixture into a shallow metal or plastic container.
  • Freeze for 1 hour, then use a fork to scrape and break up ice crystals.
  • Repeat scraping every 30–45 minutes for 3 hours, until light and flaky.
  • Spoon into glasses and serve immediately. Add whipped cream if desired.

Notes

  • Use decaf coffee if avoiding caffeine.
  • For extra flavour, add a splash of coffee liqueur (adults only).
  • Can be made a day ahead—just fluff with a fork before serving.
  • Try flavoured syrups (like hazelnut or caramel) for variation.
  • Serve in chilled glasses for best texture.
