Spiced turkey mince served in crisp lettuce leaves with fresh herbs. Light, flavorful, and perfect for a healthy weeknight dinner or appetizers.

Ingredients

  • 1/2 tsp Sesame oil

  • 500 gram Turkey mince

  • 1 Red Onion (diced finely)

  • 1 Lime (juice only)

  • 1 tbsp Fish sauce

  • 1 tbsp Green Curry paste

  • 4 Lettuce (washed)

  • 100 gram Spring onions-diced finely

Directions

  • Heat the sesame oil in a frypan until quite hot.
  • Add the turkey mince and cook whilst breaking it up with a wooden spoon, until browned through.
  • Stir in the curry paste and fish sauce.  Cook for a further minute or two for the sauces to be absorbed.
  • Take the mince off the heat and allow to cool slightly.
  • Stir in the diced red onion, shallots and lime juice.
  • Spoon large spoonfuls into lettuce cups – and eat immediately.

  • The turkey mince can be frozen – but the lettuce cups cannot.
