Ingredients

  • 300 gram Mini Marshmallow-pink and white

  • 0.25 cup Coconut (shredded)-roasted

  • 400 gram Turkish Delight-chopped

  • 0.25 cup Almonds-toasted

  • 0.25 cup Pistachios-toasted

  • 0.25 cup Cashews-Unsalted or macadamia nuts

  • 450 gram White Chocolate-melted

Directions

  • Grease two loaf tins and line the base and sides with baking paper. Lightly spray with canola oil.
  • Combine the marshmallows, coconut, Turkish delight and the nuts in a bowl.
  • Stir in the white chocolate and press firmly into the two tins.
  • Refrigerate until set (best left overnight) and cut into bars.

Notes

  • White Christmas Rocky Road is suitable to freeze for up to one month.
  • Store in a cool place in an airtight container.
