Ingredients

  • 3 cups Plain Flour

  • 1 tsp Salt

  • 1 tsp Bicarbonate of soda

  • 2 tsp Ground cinnamon

  • 1/2 tsp Baking powder

  • 1/2 tsp Arrowroot powder

  • 1 cup Apple sauce-unsweetened

  • 1 cup Brown sugar

  • 3/4 cups Vegetable oil

  • 2 tsp Vanialla Essence

  • 2 1/2 cups Zucchini-grated

Directions

  • Preheat oven to 165 degrees.
  • Flour and grease two bread tins 23 x 13 cm.
  • Add into a bowl flour,salt, bicarb soda,cinnamon, baking powder and arrowroot, mix until well combined, leave aside.
  • Whisk in a bowl apple sauce, brown sugar, vegetable oil and vanilla essence together until smooth. Add flour mixture folding it in. Add grated zucchini the mixture will moisten.
  • Divide the batter equally into the prepared tins.
  • Place into the oven to bake for about 70 minutes.
  • Let the bread cool in the tins for  about 10 minutes, then transfer to a cooling rack to completely cool.

Notes

  • Vegan Zucchini Bread can be frozen and can last (if well wrapped) for 5 days.
