A classic Australian treat made with Weetbix, coconut, and a hint of peanut butter, topped with tangy lemon icing.

Ingredients

  • Slice
  • 1 cup self-raising flour

  • 3 Weetbix biscuits, crushed

  • 1 cup shredded coconut

  • 3/4 cup brown sugar

  • 150g butter

  • 2 tbsp peanut butter

  • Lemon Icing
  • 2 tsp lemon juice

  • 1/2 cup icing sugar, sifted

Directions

  • Preheat the oven to 180°C (356°F) and grease a slice tray.
  • In a large bowl, crush the Weetbix and add the self-raising flour, brown sugar, and shredded coconut. Mix well.
  • In a microwave-safe bowl, melt the butter and peanut butter together until smooth. Pour this mixture into the dry ingredients and combine thoroughly.
  • Press the mixture firmly into the prepared slice tray and bake for 15 minutes, or until golden brown.
  • While the slice is baking, prepare the lemon icing by mixing the lemon juice and sifted icing sugar until smooth.
  • Once the slice has cooled slightly, drizzle the lemon icing over the top.
  • Allow the slice to cool completely in the tray before cutting into squares.

Notes

  • Store the Weetbix slice in an airtight container in the fridge to prevent it from becoming too crumbly.
  • Traditional Weetbix Slice can be kept in the fridge for up to a week.
  • This slice is not suitable for freezing.

    We make Weetbix Slice all the time – we LOVE it! Although our one is slightly different – no peanut butter, add one egg and only use 115g butter (everything else is the same). We always top it with melted chocolate and it’s delicious! Will have to give your version a go though by adding the peanut butter.

    Love this recilpe but I think I might try Kylie B’s version as our kindy won’t allow nuts. We once tried a similar recipe and hubby thought it would be good to use the blender instead of crushing the weetbix normally (the blender was already out and we were making a bulk lot), what a mistake!!!!! It was soooooo dense it was like a brick.

    This recipe is a fave in my house too. My son’s kindy is egg and nut free so occassionally I will put a generous amount of honey in place of PB and it is delish. Thanks again for this recipe – we love it!
