Condensed milk is perhaps the best food that there is….? Every time I open a tin I grab a teaspoon and indulge in a couple of sneaky mouthfuls. So when I tried to make this sugar free condensed milk recipe, I had more than just a few teaspoons!

The only problem with condensed milk is that it is really laden heavily with sugar – which really is what makes it taste so darn good!? But this recipe is for a sugar-free version of condensed milk – but it still has a lovely sweet flavour because it uses Stevia.

You can get Baking Stevia from your local supermarket – you find it where all the other sugars are located. I use the Natvia Baking Stevia which looks like this:

You will find the Carnation Evaporated Milk in the same place as the Stevia.? It comes in Creamy and Light – make sure you get the creamy version – it makes the end result a lot nicer! The Carnation Evaporated Milk looks like this:

Finally the Guar Gum or Xanthan Gum. You find this in the health food section of the supermarket.

A simple homemade sugar-free condensed milk, perfect for baking, desserts, and sweetening recipes without added sugar.

Ingredients

  • 1 tin Carnation Evaporated Milk (375 grams)

  • 1 cup Baking Stevia

  • 2 tbsp Butter

  • 1/2 tsp Guar Gum

Directions

  • Pop the tin of Evaporated milk and the Stevia into a medium-sized saucepan and heat on medium.
  • Whisk it continuously until the mixture starts to bubble (this will take 6 – 8 minutes or so).
  • Reduce the heat to low and allow the mixture to simmer gently.  A milk skin might form on top – this is normal – just scoop it out and dispose of it.
  • The mixture will thicken right up, once it is the consistency of condensed milk, stir in the Xanthum Gum or Guar gum, and then pop in the butter.
  • Mix until the butter is totally melted into the milk mixture.
  • Remove from the heat and refrigerate.
  • Use when cold.
