Brownies are always a good idea, but you add pumpkin into the mix and the results are almost too much: Stunning Pumpkin Swirl Brownies. A masterpiece on the plate, and loved by adults and children everywhere, this is one recipe that everyone should try.

This recipe is also a great way to sneak a little bit of happy vegetable goodness into the diets of fussy children. Don’t tell them what’s inside, and they’ll never know!

Also, this recipe calls for pumpkin puree. There are a few different ways to make this, but we’ve found the double baking method, although a little more time consuming, produces the most delicious puree.

Ingredients

  • 110 gram Unsalted butter

  • 180 gram Bittersweet chocolate-chopped

  • 2 cups Plain flour

  • 1 tsp Baking powder

  • 1.33 cups Sugar

  • 4 Egg

  • 1 tbsp Vanilla extract

  • 1.5 cups Pumpkin puree

  • 0.25 cup Vegetable oil

  • 0.5 tsp Cinnamon

  • 0.5 tsp Nutmeg

  • 0.5 tsp Allspice

Directions

  • Preheat your oven to 180 degrees and prepare a square baking dish about 20-25cm in size by greasing it and lining the bottom with baking paper.
  • In a heatproof bowl over boiling water melt the chocolate and the butter together, stirring until smooth.
  • In another large bowl, mix together the flour and baking powder, then set aside.
  • Get another bowl and combine the sugar, eggs and vanilla. Beat this mixture with an electric mixture until fluffy and well combined, or about 3-5 minutes. Then add the flour mixture to this bowl, combining well.
  • Divide the resulting batter into two medium sized bowls (there should be about 2 cups in each). Into one bowl stir the chocolate mixture, into the other add the pumpkin puree, oil and spices.
  • Lay the batters out in the pan in an equal chocolate|pumpkin|chocolate|pumpkin formation. You’ll need to do this quickly so the batters don’t set before they’re swirled.
  • Using a small spatula, or a blunt table knife, swirl the two batters around to create a marbled effect.
  • Bake in the oven until set, usually about 40 minutes. Check before hand as cooking times may vary. Cool the brownies on a wire rack, then serve.
