Ingredients

  • 250 g frozen spinach, thawed and excess liquid squeezed out

  • 3 eggs

  • 125 ml vegetable oil

  • 200 g grated tasty cheese (Bega or Devondale)

  • 1 medium onion, finely chopped

  • 100 g self-raising flour

  • Salt and pepper, to taste

Directions

  • Preheat oven to 180°C (160°C fan-forced). Grease and line a 20x20cm square baking tin.
  • In a large bowl, whisk together eggs and vegetable oil.
  • Add chopped onion, grated cheese, and thawed spinach. Mix well.
  • Fold in self-raising flour and season with salt and pepper.
  • Pour mixture into prepared tin and smooth the top.
  • Bake for 25–30 minutes or until golden and firm in the centre.
  • Cool slightly before slicing into squares.

Notes

  • Use fresh baby spinach (lightly wilted) if preferred.
  • Can be frozen for up to 2 months; reheat in microwave or oven.
  • Add a pinch of nutmeg or garlic powder for extra flavour.
