Spicy Ginger Loaf

Delicious spicy ginger loaf perfect for afternoon tea or dessert. Moist, flavorful, and easy to make.

Spicy Ginger Loaf is the grown ups version of Gingerbread men 🙂 It has all those yummy spices that make your senses sing. You won’t be able to just have on slice.

Ingredients

  • 150 gram Unsalted butter

  • 150 gram Golden syrup

  • 100 gram Treacle

  • 60 gram Brown sugar

  • 150 ml Milk

  • 250 gram Plain flour

  • 2 Large Eggs

  • 1/4 tsp Bicarb soda

  • 4 tsp Ground ginger

  • 1 tsp Ground mixed spice

  • 1 tsp Ground cinnamon

  • 25 gram Oatmeal

  • 50 gram Stem ginger in syrup-drained and chopped

Directions

  • Preheat the oven to 150 degrees.
  • Grease and line a 1kg loaf tin.
  • Place the butter, golden syrup, treacle and sugar into a saucepan.
  • Heating  gently, stir constantly, until melted.
  • Remove from the heat and add the milk.
  • Stir in the eggs.
  • Sift the flour, bicarbonate of soda, ginger, mixed spice and cinnamon into a mixing bowl and stir in the oatmeal and chopped stem ginger.
  • Make a well/hollow in the middle of the flour mixture.
  • Pour in the melted mixture.
  • Beat well with the back of a wooden spoon to a smooth consistency. pour into the tin
  • Bake for 1 1/2 hours, or until the loaf is risen and firm to the touch.
  • Stand in the tin, on a wire rack, to cool for 20 minutes, then turn out onto the rack to cool completely.
