Ingredients

  • .75 cup Raisins

  • .25 cup Mixed dried fruit

  • .3 cup Walnuts-crushed into small pieces

  • .5 Brown sugar

  • 2 tsp Cinnamon

  • .5 tsp Nutmeg

  • .5 cup Breadcrumbs

  • 4 Sheets filo pastry

  • 2 tbsp Lemon juice

  • 3 number Apple-Granny Smith or similar

  • 1 tbsp Olive oil-for spraying

Directions

  • Preheat oven to 180 degrees. Line a large tray with baking paper.
  • Prepare the apples by peeling, coring and cutting them into small cubes or slices.
  • Place them in a bowl with the lemon juice, raisins, dried fruit, spices and 1/3 cup of breadcrumbs. Stir gently, until combined.
  • Place one sheet of the filo pastry on your work space. Spray lightly with olive oil (mild vegetable oil also ok) and sprinkle over a small number of breadcrumbs.
  • Repeat this until all the pastry is used, and you have four layers.
  • Spoon the apple mix along the long side of the pastry, leaving a few cm of empty space at either end. Fold these ends in, and roll up the pastry.
  • Lift it carefully onto your prepared tray, spray lightly with oil, and bake for about 45 minutes, or until golden.
  • Let stand for 10 minutes, then slice and dust with icing sugar as desired.
  • Serve as is, or with cream, yoghurt or ice cream.
