How to Make Raw Apricot Slice

Ingredients

  • 250 gram Dried apricots

  • 1 cup Dessicated coconut

  • 1 cup Almond meal OR Wheatgerm

  • 3 tbsp Coconut oil

Directions

  • Let them soak for an hour and then drain.
  • Place all the ingredients into a food processor and pulse until the mixture is of a breadcrumb type consistency.
  • Press the mixture into a lined slice tray and sprinkle with a little additional coconut.
  • Chill for three hours or overnight.
  • Cut into slices and serve as required.
  • Recipe Hints and Tips:
  • Raw Apricot Slice is suitable to freeze for up to two months.
  • Coconut Oil is readily available at most supermarkets or health food stores.
  • To make this recipe nut-free, substitute almond meal with wheatgerm.

A delicious and healthy slice, perfect for school lunch boxes or just a sweet ‘grab and go’.

This egg free, dairy free, gluten free and no added sugar Raw Apricot Slice is a healthy substitute for muesli bars in the kids lunch boxes!  It is nice and easy to make and good if you’re eating clean!

Raw Apricot Slice is perfect for school lunches, if you have a nut-free school, just substitute the almond meal for wheatgerm or just leave it out completely!

    Hi, I love that this recipe is dairy, egg & gluten free as my son is allergic to all… Can you recommend a substitute for the almond meal (he’s also allergic to nuts). Looking forward to suggestions! 🙂

      You can leave out the almond meal if you wish Lauren – it still has a great consistency without it.

    Mine didn’t reach breadcrumb consistency. I used a little less apricots as I only had a small bag. It was more of a sticky dough??? Still tastes ok, I just cut into little apricot/coconut squares

    I made it into balls and rolled in coconut. Beautiful consistency! I tiny bit bitter with the almond meal but so I’m going to drizzle a little chocolate to combat the bitterness. I think next time I’ll leave out the almond meal and add crushed macadamia or cashew, or maybe sunflower and pepita seeds

    I got coconut oil (buttered) is that okay to use?? What can I use instead of coconut oil??

    Does anybody know if this freezes ok? or how long it keeps in the fridge? if it makes 30 thats a whole lotta lunchbox snacks for hubby 🙂

    I made this with 1/2 cup wheat germ as I needed it nut free for school and a small amount of chia seeds (why not!?!) and I only used about 2 tablespoons of coconut oil and it is yummy!!! I have frozen it in the past and it lasted well 🙂
