By the way, these are more like old-fashioned griddle cakes than scones and they are perfect to enjoy on a winter’s night!

This recipe makes 10 small or 8 medium scones. Serve them hot from the oven with lashings of butter. Yummy!

Ingredients

  • 1 tbsp Butter

  • 1 Egg

  • 1/2 tsp Salt

  • 125 gram self raising flour

  • 500 gram Mashed potatoes

Directions

  • Place the mashed potato in a bowl and mix in the butter, egg, and salt.
  • Sift the self-raising flour well. Gradually add the flour to the mashed potato mix. You may not need all of the flour.
  • Knead gently, divide into equal 10 balls (or 8 depending on how big you want them).
  • Press gently to flatten and fry in a frying pan for a couple of minutes each side and cook until brown.

Notes

  • Recipe Hints and Tips: Potato Scones are suitable to freeze for up to three months. Serve the Scottish Potato Scones with fresh butter!
