Ingredients

  • 1 sheet puff pastry, thawed

  • 2 ripe pears, sliced thinly

  • 100 g blue cheese (e.g. Castello), crumbled

  • 1 small red onion, thinly sliced

  • 1 tbsp olive oil

  • 1 tbsp honey

  • 1 tsp fresh thyme leaves (or ½ tsp dried)

  • 1 egg, beaten (for brushing)

  • Salt and pepper, to taste

Directions

  • Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper.
  • Heat olive oil in a small pan. Sauté red onion over low heat until soft and slightly caramelised (about 5 minutes).
  • Lay pastry on prepared tray. Score a 1cm border around the edges and prick the centre with a fork.
  • Arrange sautéed onions, pear slices, and crumbled blue cheese within the border.
  • Sprinkle with thyme, salt and pepper. Drizzle with honey.
  • Brush pastry border with beaten egg.
  • Bake for 20–25 minutes, or until pastry is puffed and golden.
  • Slice and serve warm or at room temperature.
