Ingredients

  • 185 gram Butter-at room temperature

  • 0.5 cup Caster sugar

  • 1 Egg

  • 1 tsp Vanilla extract

  • 1.25 cups Self raising flour

  • 0.5 cup Coconut

  • Filling
  • 60 gram Butter

  • 0.75 cup Icing sugar

  • 0.5 tsp Vanilla extract

  • 2 tsp Milk

  • Raspberry jam

Directions

  • Cream together the butter and sugar until light and fluffy.
  • Add the egg and vanilla extract and beat well.
  • Sift the dry ingredients well and fold into mixture.
  • Roll teaspoons of the mixture into balls and place on a lightly greased baking tray, press down lightly with a fork.
  • Try and keep all the biscuits a uniform size.
  • Bake at 180 degrees for 10 – 12 minutes or until golden.
  • Remove and cool on a wire rack.
  • To make the filling:
  • Cream the butter and icing sugar together until light and fluffy.
  • Add the vanilla and gradually add the milk and beat well.
  • To assemble the biscuits, put a teaspoon of jam in the centre of the bottom half of one biscuit and a teaspoon of the cream on the other.
  • Sandwich together with a slight twist.
  • Keep in an airtight container for up to five days.

Notes

  • Monte Carlos is not suitable for freezing.
