Lemon Almond Ricotta Bars

We love a sweet treat, particularly when it comes in the form of these Lemon Almond Ricotta Bars. Such a super delicious cake bar with the creamy flavour of ricotta and almond, along with tangy lemon! You can bake these in a baking pan, or in a cake pan, depending on what you have on hand.

Tangy lemon and creamy ricotta layered with nutty almond flavor in a moist bar. Light, zesty, and ideal for afternoon tea or dessert trays.

Ingredients

  • 400 gram Ricotta cheese

  • 3 Eggs-beaten

  • 4 tbsp Lemon zest

  • 2 cups Almond meal

  • 0.66 cup Caster sugar

  • 0.33 cup Almonds-chopped

  • 1 tbsp Icing sugar-to dust

Directions

  • Grease either a baking dish or a 20cm round cake pan and line with baking paper. Preheat oven to 160 degrees.
  • In a large bowl add the ricotta, lemon zest, eggs, sugar and almond meal.
  • Beat using a spoon or electric mixer until well combined.
  • Pour into your pan and smooth the top. Sprinkle the chopped almonds over the top.
  • Bake for 50-60 minutes, or until a skewer inserted int the middle emerges clean. Be careful not to over bake.
  • Dust with icing sugar prior to serving.
