Ingredients
400 gram Ricotta cheese
3 Eggs-beaten
4 tbsp Lemon zest
2 cups Almond meal
0.66 cup Caster sugar
0.33 cup Almonds-chopped
1 tbsp Icing sugar-to dust
Directions
- Grease either a baking dish or a 20cm round cake pan and line with baking paper. Preheat oven to 160 degrees.
- In a large bowl add the ricotta, lemon zest, eggs, sugar and almond meal.
- Beat using a spoon or electric mixer until well combined.
- Pour into your pan and smooth the top. Sprinkle the chopped almonds over the top.
- Bake for 50-60 minutes, or until a skewer inserted int the middle emerges clean. Be careful not to over bake.
- Dust with icing sugar prior to serving.
