  • 1.5 cups Wholemeal Self Raising Flour
  • 1/2 cup Coconut
  • 1/2 cup Strawberry Jam
  • 2 tbsp Cinnamon for dusting

Jam Surprise Muffins – it’s like a Jam Doughnut, but in a Muffin! These are simply gorgeous and they are divine with Blackberry Jam too!

Jam Surprise Muffins

Method

  1. Preheat oven to 170 degrees C (fan-forced). 190 degrees C (conventional).

  2. Beat eggs, honey and oil together.

  3. Add flour and coconut.

  4. Mix in milk.

  5. Grease each muffin tin with oil, and use a strainer to dust with cinnamon.

  6. Fill each muffin tin 1/3 full with mixture, and place 1 teaspoon of strawberry jam into the centre of the mixture of each muffin.

  7. Add remaining mixture, filling each one 2/3 full.

  8. Dust the top with cinnamon.

  9. Bake for 20 minutes.

  • Jam Surprise Muffins are suitable to freeze for up to two weeks.
