I love Impossible Pies, here we have the Impossible Milk Tart.
We have the Coconut Impossible Pie and the Savory Impossible Pie recipes already – but this one is something a bit left of centre.
It is a traditional South African dessert, like an Impossible Custard Tart.
Totally delicious – good if you have lots of milk to use up! Enjoy!

Ingredients
30 g Butter
4 Eggs, At Room Temperature separated
150 g Plain Flour
1/2 tsp Salt
2 tsp Vanilla Extract
1 tsp Cinnamon
250 g Castor Sugar
1 tsp Baking Powder
4 cups Milk full cream is best but you can use skim
Directions
- In a microwave proof bowl, melt the butter.
- Add the egg yolks(keep the whites in a separate bowl), add caster sugar and beat well with a whisk.
- Sift the dry ingredients well add to the egg mixture.
- Slowly at first beat in the milk and vanilla extract.
- Beat the egg whites in a separate bowl until foamy and fold them into the milky mixture.
- Pour into a round greased pie dish. Sprinkle with cinnamon.
- Bake at 180 degrees for 55 – 60 minutes.
- Serve hot or cold with a scoop of vanilla ice cream.
Notes
- Impossible Milk Tart is not suitable for freezing.
- Will keep in the fridge for up to three days, covered well with plastic wrap.
