We used lemon in this recipe but just in case you don’t have lemons, lime works, too!

Ingredients
- Base:
250 g plain sweet biscuits (e.g. Arnott’s Nice), crushed
100 g unsalted butter, melted
- Filling:
500 g cream cheese, softened
300 ml thickened cream
100 g caster sugar
3 tbsp gin
2 tbsp tonic water
Zest of 1 lime
Juice of ½ lime
3 tsp gelatine powder
2 tbsp boiling water
Directions
- Grease and line the base of a 20cm springform tin.
- In a mixing bowl, combine crushed biscuits and melted butter.
- Press firmly into the base of the tin and refrigerate while you prepare the filling.
- In a small bowl, dissolve gelatine powder in boiling water. Let cool slightly.
- Beat cream cheese and caster sugar together until smooth.
- Add gin, tonic water, lime zest and juice. Mix until combined.
- In a separate bowl, whip the cream until soft peaks form.
- Fold whipped cream and cooled gelatine into the cream cheese mixture.
- Pour mixture over the chilled base and smooth the top.
- Refrigerate for at least 4 hours or overnight until set.
- Garnish with extra lime zest or slices before serving.
Notes
- Not suitable for children due to alcohol content.
- For stronger flavour, increase gin to 4 tbsp—but reduce tonic slightly.
- Use a botanical-style gin like Four Pillars or Bombay Sapphire for a citrusy lift.
- Store in fridge and consume within 3 days.
- For a non-alcoholic version, swap gin and tonic for lemon-lime soda and extra lime juice.
