Soft, fluffy muffins loaded with cheese, perfect for lunchboxes, snacks, or as a side with soup.

Ingredients

  • 2 cups Self raising flour

  • 2 cups Cheese-grated

  • 2 cups Milk

Directions

  • Preheat oven to 180 degrees.
  • Mix together the ingredients in a large bowl. Spoon out into muffin tins.
  • Bake at approx 180 degrees for 30 minutes until golden brown.
  • These muffins are only a fairly basic recipe so for more taste, you can add 1 cup of these mixes such as: Bacon – chopped finely, Tomatoes, Mushrooms or Pineapple.
  • Easy Cheesy Muffins can be frozen, wrap in plastic wrap for up to twelve weeks.
  • Grease your pan well, these are notorious for sticking.  Alternatively, place a spoonful of the mixture on a baking tray and cook like flat cakes.

      Yes they do, just pop them in a ziplock bag (making sure they aren’t too squashed up) – and they will freeze well for up to three months!.

    Just wanted to say that they are great!!!! thanks for sharing 🙂 …..instead of making them large I have been making them as mini muffins for the kids lunches…..they are a huge hit…we put all sorts of things in them….I get about 46-48 mini muffins…great for sticking to the budget…the kids feel like they are getting a special treat 🙂

    just made these but I used rice flour instead of self raising flour turned out alright will add either bacon or ham next time for added flavour

    These are so good! I used wholemeal self raising flour. Made one batch of just cheese yesterday and the two batches of cheese and bacon today! Yummy!
