Cinnamon Cookies

Delicious homemade cinnamon cookies dusted with powdered sugar perfect for festive occasions

Nothing tells me more that Christmas is knocking on my door than the smell of Cinnamon Cookies, baking in the oven. Here is a yummy Christmassy treat to get you into the Yuletide Spirit.

Ingredients

  • 250 gram Butter-softened

  • 0.75 cup Dark brown sugar

  • 1 Egg yolk

  • 1 tsp Vanilla extract

  • 2.25 cups Plain flour

  • 0.25 cup Caster sugar-for sprinkling

  • 0.5 tsp Cinnamon-ground

Directions

  • Beat butter and sugar together until pale and creamy.
  • Add egg yolk and vanilla and beat until smooth.
  • Stir flour into mixture until well combined.
  • Divide mixture in half, wrap in plastic and refrigerate for 15 minutes.
  • Roll out one piece at a time to 3 mm thick.
  • Cut out shapes using cookie cutters and arrange on baking trays.
  • Combine extra sugar and cinnamon in a small bowl and sprinkle lightly over biscuits.
  • Bake at 180 degrees for 8-10 minutes or until lightly golden.
  • Cool on wire racks.

Notes

  • Cinnamon Cookies can be frozen in dough form.  Roll into a log and wrap in baking paper.  Freeze for up to two months.
  • Really good to serve to people who haven’t quite got the Christmas spirit yet.
