7. Sweet Potatoes

Do you know why sweet potatoes are orange? It’s because they contain carotenoids, which are particular plant pigments that get made into vitamin A when we eat them. You’ve probably heard that eating too much vitamin A is bad, but when it comes from carotenoids, it’s different. This is because the carotenoids only become vitamin A as we need them too, so you can’t get too much vitamin A from eating them. Of course, sweet potatoes are also a great source of vitamin C, fibre and folate. Plus they’re cheap and easy to cook in a variety of ways. So many options!
