Gruyere Cheese is a very smooth cheese to cook with and has a nice tang to it without being too harsh. A delicious savoury biscuits for the summer time BBQ.

125 gram Cheese (Gruyere)-finely grated
90 gram Butter
1 cup Plain Flour
2 number Egg yolks
1 number Egg whites-to brush
0.5 tsp Cayenne Pepper
0.5 tsp Paprika
0.25 tsp Dry Mustard
0.5 tsp Black pepper
1 tbsp Sesame seeds-for topping
1 tbsp Caraway seeds-for topping
Directions
- Preheat oven to 170 degrees.
- Using an electric mixer beat butter until light and creamy. Sift flour, cayenne pepper, paprika, dry mustard and black pepper together and stir through butter.
- Add egg yolks and gruyere cheese and press together using your hands.
- Lightly flour your bench and roll dough out to a nice thin crust, about 2-3 mm thick. Cut out shapes using a cookie cutter and place onto a lined baking tray.
- Brush each biscuit lightly with egg white, using a pastry brush or finger tips.
- Lightly sprinkle each biscuit with either sesame or caraway seeds.
- Bake for 15-18 minutes, cool on a wire rack.
- Recipe Hints and Tips:
- Gruyere Savoury Biscuits, store in airtight container and can be frozen for 6 months.
- You can also use poppy seeds as a topping.
