Mexican Street Corn Salad

Delicious Mexican street corn salad with fresh corn, cheese, and herbs. Perfect for summer gathering.

Mexican styled dishes are always a family favourite for dinner, this recipe is perfect as a side dish to your most loved Mexican main or just by itself for a healthy and tasty option for lunch the next day. Don’t forget to top the salad with some feta and a squeeze of lemon for extra flavour!

Grilled corn tossed with spices, cheese, and lime for a zesty, flavorful Mexican-inspired salad.

Ingredients

  • 2 Can Corn kernels, drained

  • 1 Red onion, finely diced

  • 1/2 cups Feta

  • 1 tbsp Olive oil

  • 1/2 cups Coriander

  • 1 tbsp Jalapeno, chopped (Jarred)

  • 1 Lime, juiced

  • 1/2 tsp Cumin powder

  • 1 tsp Garlic, minced

  • 3 tbsp Mayonnaise

  • Pinch Cayenne pepper to taste

Directions

  • Add the corn kernels and olive oil to a fry pan and slightly brown corn for 2-3 minutes.
  • Remove the corn from the heat.
  • In another bowl add the Jalepeno’s, minced garlic, cumin, mayonnaise, lime juice and cayenne pepper and mix well.
  • Add the corn, red onion and coriander to a bowl. Top with salad dressing and mix well to combine. Top with feta and serve!
