Zucchini and Haloumi Salad

Zucchini and haloumi cheese salad with fresh greens, perfect for a light, healthy meal.

In our household we love haloumi, it’s best served hot and goes perfectly with lamb meatballs and topped with dill yoghurt.

This zucchini and Haloumi salad has a perfect blend of creamy cheese and tangy rocket, the baked zucchini pulls the salad together and it’s a great side dish to serve up with your family’s favourite main meals. It is also a lovely salad to enjoy on its own for a healthy and tasty snack! try it and enjoy!

Zucchini and Haloumi Salad

Fresh zucchini and golden haloumi cheese tossed together with a light dressing, creating a flavorful and healthy salad.

Ingredients

  • 1 packet Haloumi, sliced into 2cm thickness

  • 250 g number Rocket

  • 3 Zucchini, cut into 3cm thickness pieces

  • 1 tbsp Olive oil

  • 1 gram Salt and pepper

Directions

  • Preheat the oven to 180 degrees.
  • Add the zucchini and oil and add salt and pepper to taste
  • Bake for approximately 30 minutes until the zucchini is soft and slightly golden.
  • Meanwhile, place the rocket into a salad bowl.
  • Add the cooked zucchini to the salad bowl.
  • In a Fry pan on a medium heat add a little olive oil and then add the sliced haloumi frying until golden then flip and repeat.
  • Add the haloumi to the salad bowl and toss well. Serve immediately.
