Ingredients

  • 1 tbsp Olive oil

  • 1 medium Onion-diced

  • 2 Garlic cloves-minced

  • 700 gram Butternut squash-diced

  • 3 Celery stalks-chopped into small pieces

  • 4 cups Chickpea

  • 800 gram Diced tomatoes

  • 2 cups Vegetable stock

  • 2 tsp Chili powder

  • 1.5 tsp Ground cumin

  • 2 tsp Salt

Directions

  • In a large pot, heat the olive oil and then add the onion, cooking until soft. Add the minced garlic, and cook for another minute or two.
  • Add the chopped pumpkin and celery, stirring to allow them to heat.
  • Add the rest of the ingredients into the pot and simmer for 30-40 minutes, until all the vegetables are tender and soft. If you’re concerned about the chickpeas being too soft, add them later.
  • Serve warm with rice, bread or the grain of your choice.
