Ingredients
1 tbsp Olive oil
1 medium Onion-diced
2 Garlic cloves-minced
700 gram Butternut squash-diced
3 Celery stalks-chopped into small pieces
4 cups Chickpea
800 gram Diced tomatoes
2 cups Vegetable stock
2 tsp Chili powder
1.5 tsp Ground cumin
2 tsp Salt
Directions
- In a large pot, heat the olive oil and then add the onion, cooking until soft. Add the minced garlic, and cook for another minute or two.
- Add the chopped pumpkin and celery, stirring to allow them to heat.
- Add the rest of the ingredients into the pot and simmer for 30-40 minutes, until all the vegetables are tender and soft. If you’re concerned about the chickpeas being too soft, add them later.
- Serve warm with rice, bread or the grain of your choice.
