Bacon and Zucchini Pasta

Delicious bacon and zucchini pasta dish with creamy sauce, perfect for a quick family dinner.

I love recipes that require the least amount of washing up. So Bacon and Zucchini Pasta is terrific. One pot for pasta and one frying pan. That means a fast washing up and get to the lounge chair with.

Ingredients

  • 1 Zucchini-sliced

  • 2 cups cooked pasta

  • 2 Bacon-sliced

  • 1.5 tbsp Fresh basil-chopped

  • 0.25 cup Thickened cream

  • 0.25 cup Chicken stock

  • 1 Black pepper-freshly ground

  • 1 Parmesan cheese-freshly grated

Directions

  • In a frying  pan, cook the bacon until crispy.
  • Set on paper towel to drain. In the same pan remove the most of the bacon fat.
  • Add the zucchini and cook until tender.
  • Add the pasta and the cream, stock, and basil and let it simmer for 8 minutes until the sauce has reduced and thickened.
  • Serve with grated cheese on top

Notes

  • Bacon and zucchini pasta is not suitable for freezing.  Is best made fresh before serving.
