If you’re tired of your usual breakfast meal but in a hurry to get those tummies filled, this Basic Chaffle recipe will save your morning!

Chaffles, as in cheesy waffles are low-carbohydrate waffles made with just two ingredients: cheese and eggs. They are healthy and perfect for breakfast, as they are high in protein and low in carbs.

Keto-friendly and gluten-free!

Plus, they are easy to make! Aside from some eggs and cheese, all you’ll need is a waffle iron. You can top these with so many of your favourite waffle toppings – fruit, maple syrup, whatever!

As you make these, the room will be filled with that wonderful cheese smell that will make everyone’s mouth water. The best part of these chaffles are the golden crispy edges so make sure to “accidentally” mess up the edges (on purpose!)

Ingredients

  • 1 large egg

  • ½ cup (50g) shredded mozzarella cheese

  • 1 tbsp almond flour (optional, for structure)

  • ¼ tsp baking powder (optional)

Directions

  • Preheat mini waffle maker or sandwich press.
  • In a bowl, whisk egg until smooth.
  • Stir in mozzarella, almond flour, and baking powder if using.
  • Lightly grease waffle maker with cooking spray or butter.
  • Pour half the mixture into the waffle maker and cook for 3–4 minutes or until golden and set.
  • Repeat with remaining mixture.
  • Serve immediately or cool on a rack to keep crisp.

Notes

  • Best served fresh—will soften if stacked or stored warm.
  • Add herbs or garlic powder for a savoury twist.
  • Use as a low-carb sandwich base or burger bun.
  • Swap mozzarella for cheddar for extra flavour.
  • Store leftovers in the fridge for up to 2 days; reheat in toaster.
