Ingredients

  • 1 onion, chopped

  • 1 can (400ml) coconut cream

  • 1-2 tsp curry powder

  • 1 tsp garlic, crushed

  • 500g mixed vegetables (e.g., pumpkin, choko, potato, carrot)

  • 500g pork sausage

Directions

  • Put the sausages, onion and vegetables into the slowcooker (you choose whether to chop up the sausages or leave them whole). Mix the curry powder and coconut cream together and pour on top.
  • Mix it all and cook on low for about 6 hours.
  • Serve with rice or over pasta.

Notes

  • Slowcooker Coconut Curry Sausages freezes well.  Allow to cool to room temperature, 3/4 fill a ziplock bag and freeze for up to four months.

    I’d suggested using chicken stock instead of beef stock, the beef flavour overpowers the flavours of other meats, chicken stock is far more versatile and allows the flavour of the pork to come through.
