Old Fashioned Mango Chutney

Mango chutney in a glass jar with fresh mangoes and herbs, perfect for homemade preserves.

You will need an extra large stock pot to make this whole batch! My parents and grandparents (all from North Queensland) would always use this recipe to use up the glut of ripe mangoes in the backyard every year.

A sweet and tangy mango chutney made with ripe mangoes, spices, and vinegar. Perfect as a flavorful accompaniment to meats, cheeses, or sandwiches.

Ingredients

  • 18 number Mangoes

  • 5 cups White Sugar

  • 4 cups Brown Vinegar

  • 200 gram Fresh ginger peeled

  • 1 cup Sultanas

  • 1 tbsp Salt

  • 3 tbsp Crushed garlic

Directions

  • Peel and cut the mangoes into small pieces.  Cut up all other ingredients finely.  Put into a large stock pot and cover with the brown vinegar, salt and sugar.  Bring to the boil.  Boil for approximately two hours or until liquid is thickened.  Pour the hot liquid into sterilized jars and seal well. This will make about seven standard sized jars.
