How to Make Easy Corn Salsa

We eat a lot of Mexican in our house and I found I needed something refreshing to cut through the heaviness!! This recipe has very few ingredients in it but is rather tasty! It’s so quick and easy!

Corn salsa can go with tacos, enchiladas or anything Mexican really! it makes for a great side dish that can be mixed in with any meal for an extra hit of flavour or to make your cooking go that extra bit further for leftovers and lunches the next day.

Ingredients

  • 1 Can Corn kernels

  • 1 Red capsicum, diced

  • 1 Punnet Cherry tomatoes

  • 3 Spring onions, sliced

  • 1 Lime, Juiced

  • 1/2 Bunch Coriander

Directions

  • In a small bowl mix all of the ingredients together.
  • Toss the salsa and squeeze the lime over the top.
  • Serve and Enjoy!
