You can pick up those little clear cups from most $2 shops or party shops. You can also swap out the Caesar dressing for any good creamy sauce.

Crisp baby asparagus and classic Caesar salad ingredients served in mini cups, perfect for elegant starters or party appetizers.

Ingredients

  • 1 Chicken Breast – skin-on thighs are great too!

  • 1 thin, small baguette

  • 2 Bunches baby asparagus, snap off the tough ends

  • 1 baby lettuce, washed and torn into pieces that fit the cups

  • 5 spring onions, sliced on the angle

  • 1 Clove Garlic, crushed

  • 5 rashes bacon, slice

  • 1 bunch Continental parsley, leaves removed

  • .5 cup Parmesan cheese, shaved

  • 1 tsp salt and pepper

  • .25 cup Olive oil

  • .5 cup Caesar Salad Dressing

Directions

  • Preheat a non-stick frypan over medium heat
  • Turn oven to 100°C and leave the door ajar
  • Slice the baguette on an angle to create crotons.
  • Place 2 tbsp olive oil and garlic in a bowl, stir, and brush the crotons.
  • Place in the oven to dry out for about 10 mins.
  • Slice chicken breast lengthways through the middle.
  • Season with salt and pepper, add olive oil to the pan and fry until golden, about 3 mins on each side.
  • Slice on an angle into bite-sized pieces and set aside
  • Meanwhile, pop the asparagus into the frypan and briefly sauté for two mins.
  • Line your cups up on the bench and start assembling.
  • Place a piece of lettuce in each cup, a crouton, 2 pieces asparagus, spring onion, chicken, bacon, parmesan cheese, parsley and a little dressing.
