Ingredients

  • 400 g red or pink salmon (canned, drained, flaked)

  • 1 (½ cup) mashed potato

  • (½ cup) plain flour

  • 2 medium eggs

  • 1 medium brown onion, finely diced

  • (½ cup) breadcrumbs

  • 1 tbsp salt

  • 3 tbsp canola oil

Directions

  • Combine mashed potato, salmon, eggs, flour, onion, and salt in a bowl.
  • Mix until well combined.
  • Roll mixture into balls and coat with breadcrumbs to form patties.
  • Heat canola oil in a frying pan over medium-high heat.
  • Fry patties on each side until golden brown.
  • Cook in batches or use a large electric frypan to cook at once.
  • Serve warm with salad.

Notes

  • Store cooked patties in the fridge for up to 2 days in an airtight container.
  • Freeze patties for up to 3 months.
  • Reheat in a frying pan or oven to maintain crispiness.
  • Leftovers are delicious in a sandwich with tomato sauce.
  • Use wholemeal breadcrumbs for extra fibre.
