Salmon on Cauliflower Puree

Delicious baked salmon served with creamy cauliflower puree, perfect for a healthy and easy dinner.

This is how George Colombaris showed me how we can all make our salmon fillets restaurant quality at home. Salmon fillets are not inexpensive, so we need to cook them so they melt in our mouths. If you love Cauliflower with Cheese sauce you will love the puree.

Ingredients

  • 4 number Salmon Fillets

  • 4 tbsp Olive oil

  • 0.5 number Cauliflower

  • 0.33 cup cheese (Parmesan)-grated

  • 1 tbsp Butter

  • 1 cup Snow peas

  • 2 tbsp Pepita, sunflower & pine nut mix

  • 1 tbsp Sweet soy

Directions

  • Preheat oven to the lowest setting 40-50 degrees. Yes this is the key to amazing salmon and yes it will be cooked.
  • Place salmon fillets in baking dish and drizzle 1 tablespoon olive oil over each fillet, you may need a touch more as each fillet should be very well covered in olive oil, depending on fillet size.
  • Place in oven and bake for 40 minutes.
  • Place cauliflower in a steamer or saucepan with water and cook over medium to high heat until soft.
  • When cooked drain, add butter and grated parmesan cheese. Using a stick blender whiz until puree, season with salt and pepper.
  • Cook snow peas in boiling water for 2 minutes then drain.
  • Place 2 tablespoons of cauliflower puree on the center of the plate then place salmon fillet on top.
  • Drizzle a thin line back & forth of sweet soy over salmon, place snow peas on top the sprinkle with nut mix.
  • Place a few lemon wedges on and serve immediately.
  • Recipe Hints and Tips:
  • Salmon on Cauliflower Puree is not suitable for freezing and best served immediately.
