Grilled Chicken Breasts With Lime Sauce

Ingredients
4 Chicken Breast
.25 tsp Salt
.25 tsp Pepper
.75 cup Chicken Stock
.75 tbsp Brown sugar
3.5 tbsp Lime juice
1.5 tbsp Dijon mustard
2 tbsp Water
1 tsp Corn flour
1 tbsp Butter
Directions
- Put each of the chicken breast halves in between two sheets of strong plastic wrap and using a meat mallet or small skillet pound them until they’re just less than 1cm thick.
- Season with salt and pepper.
- Spray a grill pan (you can use a normal pan but the chicken might have a slightly different texture) with cooking spray and heat on a medium-high heat.
- Add the chicken and cook for a few minutes on each side, or until browned. Set the chicken aside, but do not drain the liquid from the pan.
- In the same pan, add the chicken broth, sugar, 2 tbs of the lime juice, and the mustard.
- Cook on a medium heat, scraping the pan to get some of the browned chicken off if any remains.
- Mix together the water and cornstarch in a small bowl until smooth.
- Add the cornstarch to the pan and bring to a boil on a medium-high heat.
- Cook for a minute or so, until the sauce thickens. Whisk through the rest f the lime juice and the butter, stirring until the butter is melted and well combined.
- Serve chicken with sauce on the side or slathered on top.
