Ingredients

  • 300 g oyster mushrooms, cleaned and trimmed

  • 1 cup (150g) plain flour

  • 75 g cornflour

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • .5 tsp salt

  • .5 tsp black pepper

  • 185 ml cold water (plus extra if needed)

  • Vegetable oil, for deep or shallow frying

  • Lemon wedges or dipping sauce, to serve

Directions

  • In a large bowl, mix flour, cornflour, garlic powder, paprika, salt and pepper.
  • Gradually whisk in cold water until you get a thick, smooth batter (similar to pancake batter).
  • Heat oil in a deep fryer or large frying pan over medium-high heat.
  • Dip each mushroom into the batter, coating well.
  • Carefully fry in batches for 3–4 minutes per side, or until golden and crispy.
  • Drain on paper towel.
  • Serve hot with lemon wedges or dipping sauce of choice.

Notes

  • Great with vegan aioli or sweet chilli sauce.
  • Best served fresh—reheating will lose crispiness.
  • Add chilli flakes to the batter for a spicy version.
  • You can shallow fry in a non-stick pan to use less oil.
  • Works well with king oyster or enoki mushrooms too.
