This ice cream pudding is lush and delicious, but by adding the popcorn to it it’s also a little bit of fun and a whole lotta yum!
The textures and flavour seem a little weird at first but it really works. My kids love them.
Popcorn and Picnic Ice Cream Puddings serve as ideal desserts ? no matter what the occasion.
With summer approaching, the days of picnics and family gatherings are here. While there are endless delightful food options from which to choose, one classic favourite that often pops up is popcorn and picnic ice cream puddings.
Not only do these dishes bring back the nostalgia of childhood memories and simpler times, but they also provide a much-needed treat and sweet escape during sunny days. A perfect balance between crunchy and creamy textures, with just the right amount of sweetness!
Just the thought of them can conjure up memories of summer days spent outdoors, enjoying the sunshine while snacking on these treats! Not only are they incredibly delicious, but they also make fun finger food that can easily be shared while savoring tasty morsels as the warm summer breeze rustles through the trees.
You will need 6 to 8 individual pudding moulds for this recipe. Mine are Soffritto non-stick pudding moulds and measure 5.5 cm across the bottom and 4 cm deep. You could also use those little disposable tin foil moulds.
You could also use the following tins for this recipe:
- Rectangle Loaf Tin – 22 cm x 11 cm or 4 cup capacity takes 2lts ice cream with maybe a little leftover.
- A smaller loaf tin 15 cm x 8 cm or 2 cup capacity makes 2 3 cakes (if you don’t quite fill to the top you will get 3).
- 20 cm round cake tin.

Hi, thanks for bringing that up! It’s 160°C. Give us a min to rectify this oversight so it won’t confuse…
