Just whip cream, fold in condensed milk and vanilla, and freeze. That’s it. The result? Creamy, scoopable ice cream that’s ready in hours—and endlessly customisable. Add crushed strawberries, chopped choc bars, or whatever’s in the pantry. It’s perfect for school holidays, last-minute dinner guests, or when the kids are “bored” and need a treat now. One bowl, no cooking, total win.

The only problem with making your own ice cream at home is that it tends to go very hard when you freeze it.  But to stop that happening, once the ice cream has been frozen, pop it into a large zip lock bag – and it will be totally scoopable right away!  Dunno how it works – but it does!

Ingredients

  • 1 tsp Vanilla Extract

  • 1 can sweetened condensed milk (395 grams)

  • 1 Thickened Cream (600 millilitre)

Directions

  • Beat the cream with an electric mixer until it begins to thicken.
  • Add the vanilla and beat until a light whipped cream forms.
  • Gradually add the condensed milk and keep beating until it thickens and becomes a nice cream.
  • Pour into a container and freeze until hard.

Notes

  • You can add all sorts of flavourings depending on what you like, macadamia nuts, mango puree, coffee, strawberries, you favourite chocolate bar – anything you like!
  • You can use this recipe as a base for the Frozen Plum Pudding, or the Raspberry and Malteaser Ice Cream Cake!
