Raspberry Dairy Free Ice Cream. Most people that have had to give up on dairy foods would probably miss ice cream the most.

And until recently I didn’t even know that it was possible to make ice cream without it! It tastes just like a soft-serve Ice Cream, only better.

Ingredients

  • 500 gram Raspberries-frozen

  • 0.25 cup Caster sugar

  • 2 Egg whites

Directions

  • In a blender place the sugar and the frozen raspberries and pulverise until all there are no lumps.
  • Whip the two egg whites until stiff peaks are formed then fold into your raspberries and sugar mixture.
  • Spoon into dessert cups and serve with mint sprigs.

Notes

  • Dairy Free Ice Cream is suitable to freeze for up to two months.
  • You can use any berries or frozen fruit you like.

    You can also make dairy free sugar free ice cream just by freezing chopped banana. When solid put in your processor & process till it becomes an ice cream texture. You can add cacao powder to make chocolate, or add other frozen fruits as well. Can be done with mango too. It’s delicious & a great way to get fussy kidlets eating fruit. I’ve given the plain banana to people who swear they hate banana & they haven’t realised it’s just fruit. 🙂
