How to Upcycle Leftover Christmas Spuds

Ingredients

  • 4 large Potatoes

  • 2 cups leftover salad or Coleslaw

  • 1 cup Ham-diced

  • 4 tbsp Sour light cream

  • 1.5 cups Cheese-grated

  • 4 tsp Sweet chilli sauce

Directions

  • Preheat oven to 160 degrees.
  • Pour 4 cups salted water in large saucepan, spike potatoes with a fork all over to prevent splitting. Add potatoes to pot and bring water to the boil, rapidly boiling for 10 minutes.
  • Drain and place each potato in a serving bowl, cut into quarters. Top with coleslaw,  ham, sour cream, grated cheese and sweet chilli sauce.
  • Place into oven at 160 oC for 10-15 minutes until melted or microwave on high for 1 minute 30 seconds until cheese melts.
  • Recipe Hints and Tips:
  • Christmas Spuds are not suitable for freezing.
  • You can use any salad you have leftover from garden to rice salads & it doesn’t matter if they are alittle soggy.
