Ingredients

  • 500 gram Beef mince

  • 5 Large Tortillas or Wraps

  • 1 tbsp Olive oil

  • 1 Onion -finely chopped

  • 1 Red capsicum-150 grams

  • 1 tbsp Garlic-crushed

  • 2 tbsp Tomato Paste

  • 1 cup Kidney beans

  • 1 cup Cheese- grated

Directions

  • Heat the oil in a frying pan and cook the onion, garlic and capsicum until tender.
  • Add the mince and cook until well browned.
  • Add the tomato paste, the kidney beans (drained) and a small splash of water to moisten. Simmer for five minutes.
  • Preheat the oven to 180 degrees.
  • Grease a cake tin or springform pan, place one tortilla on the base, spoon the mince mixture over the top, sprinkle with a small amount of cheese, keep repeating until you finish with a tortilla on top.
  • Sprinkle with more cheese and bake in the oven 25 minutes or until golden.
  • Cut into wedges and serve with salad and sour cream.

Notes

  • Beef Tortilla Stack is not suitable for freezing.
  • Best served straight out of the oven.

    I do a half a capsicum, because my kids don’t like it and also add a small can of corn and a bit of chopped mushroom, with a teeny bit of pasta sauce. I serve it with guacomolli (or just plain mashed up avocado!) and sour cream on top. SO yummy! 🙂
