Ingredients
2 cups Plain flour
2 tsp Baking powder
225 gram Butter-room temp
0.66 cup Peanut butter-smooth
1.5 cups Brown sugar-packed
1.5 tsp Vanilla
2 Eggs
1 cup Oats
0.25 cup Pumpkin seeds
2 tsp Ground cinnamon
Directions
- Preheat oven to 190 degrees and prepare a baking sheet by laying with baking paper.
- In a bowl mix together the cinnamon, flour and baking powder. Meanwhile in another bowl, using an electric mixer, beat together the peanut butter, butter, brown sugar, and vanilla extract.
- To this mix add the eggs one at a time, beating after each. Then gradually add in the flour.
- Using a wooden spoon or spatula, fold through the pats and pumpkin seeds
- Roll about a tbs worth of the dough mix in your hands and place onto your baking tray. Flatten slightly with a spoon or your hand.
- Bake for 12-15 minutes or until colouring is light brown. Cool for a few minutes on the baking sheet before cooling completely on a rack.
