180 gram Unsalted Butter-Soften
.75 Castor Sugar
3 Eggs-Beaten
1 1/3 cups Self Raising Flour
2 tsp Lemon Zest-Finely grated
1 tsp Lemon juice
2 Castor Sugar-Extra Fine to sprinkle
Icing Sugar-to dust
Lemon Zest -to garnish
Directions
- Preheat oven to 160 degrees.
- Prepare the cake tin by rubbing butter all over and then flour a deep 18cm round cake tin, shaking out any excess.
- Beat the butter and sugar with until pale and creamy.
- Add the eggs gradually, beating well after each addition.
- Fold in the flour, lemon zest and juice until combined.
- When smooth, spoon into the prepared tin and level the surface.
- Sprinkle the extra caster sugar over the top.
- Bake for 1 hour, or until a knife comes out clean when inserted into the centre of the cake.
- Allow to cool for 15 minutes in the tin before turning out onto a wire rack.
- To serve, dust with icing sugar and garnish with lemon zest.
