So here is a recipe for your own home made version. Has to be better than the shop bought ones!

Ingredients

  • 1 cup Raw sugar

  • 0.75 cup Marmalade

  • 3 Zest of oranges

  • 1 cup Orange juice

  • 2 Zest of lemons

  • 0.33 cup Lemon juice

  • 0.25 cup Cointreau -(optional)

  • 2 cups Sultanas

  • 1 cup Prunes-pitted and finely chopped

  • 2 cups Dates-pitted and finely chopped

  • 1 cup Glace cherries-chopped

Directions

  • Combine sugar, marmalade, orange zest and juice, lemon zest and juice and Cointreau in a saucepan over medium heat.
  • Stir until sugar dissolves and mixture comes to the boil.
  • Add fruit and mix until well combined.
  • Reduce heat and cook for 8-10 minutes or until plump, stirring frequently.
  • Remove from heat and allow to cool.
  • Spoon into sterilised jars or use immediately in recipes.

Notes

  • Christmas Fruit Mince is suitable for freezing.
  • Seal in a zip lock bag and freeze for up to four weeks.
