Ingredients

  • 1 frozen Pampas Sweet Shortcrust Pastry shell -(about 9inch)

  • 1 tin Condensed milk

  • 2 Eggs

  • 0.33 cup Brown Sugar

  • 2 tsp Vanilla extract

  • 125 gram Macadamia pieces

Directions

  • Blind bake for 10 minutes at about 180 degrees. Line base of cooked pie base with macadamia pieces. In a bowl mix 1 tin condensed milk, 2 eggs, 1/3 cup brown sugar, 2 teaspoons vanilla extract.
  • Pour the mixture over the nuts and base. The pie shell with be full to brim so place it on a tray so you don’t get a mess in your oven.
  • Cook for about 45 minutes on 150 degrees in oven, you need to cook slowly to set the caramel filling. The nuts will rise to the top and be golden and yummy. Allow pie to cool in the oven then let cool covered on the bench. No need to put in fridge.
  • Recipe Hints and Tips:
  • If you make this the day before the caramel and the pie base meld together a bit.
  • You don’t need to add anything when serving because its delicious by itself.
