Chicken and Spinach Meatloaf is a yummy, easy, healthy dinner. This doesn’t have the guilt of traditional meatloaf, add a dollop of greek yoghurt, a garden salad and you have a delicious healthy meal for the family.

A wholesome meatloaf made with chicken mince and spinach, perfect for a family dinner or an easy make-ahead meal.

Ingredients

  • 500 gram Chicken Mince

  • 3 Spinach Leaves

  • 2 tsp Lemon Zest

  • 2 Eggs

  • 1 cup Bread Crumbs

  • 100 gram Pine Nuts

  • 2 Garlic Clove

  • 2 tbsp Mayonnaise

  • 100 gram Feta

Directions

  • Preheat oven 180 degrees.
  • Finely chop spinach, zest lemon, lightly beat eggs and place in large bowl.
  • Add chicken mince, breadcrumbs, pinenuts, feta, garlic and mayonnaise to bowl and mix together with your hands, yep messy but it really is the best way.
  • Line a baking tray with baking paper and place meatloaf mix in center. Mold into a log like shape smoothing with your hands.
  • Bake for 45 minutes, the outside will just start to brown.

Notes

  • Chicken and Spinach Meatloaf is suitable for freezing for up to 4 months or keep refrigerated in airtight container for up to 2 days.
  • Serve with a dollop of greek yoghurt and a garden salad.
