Frugal Bacon and Veggie Slice

Oh nothing better than a piece of Bacon and Veggie slice for lunch, this is an easy to cook recipe that is tasty and filling for the family.  You can also cook it a bit longer – cut it into wedges and serve it for morning tea with a slab of butter.

It can be frozen so you have some on hand at all times – and is also good for school lunches!  A very versatile recipe!

Budget-friendly slice loaded with bacon and vegetables — hearty, flavorful, and perfect for breakfast, lunch, or snacks.

Ingredients

  • 200 gram Bacon (diced)

  • 6 Eggs

  • 1/3 cups Cream

  • 1 cup self raising flour

  • 1 cup Grated cheese

  • 2 Carrots (grated)

  • 2 Zucchini (grated)

  • 1 Onion

  • 4 Mushrooms (sliced)

  • 2 tsp Tuscan Seasoning

  • 2 tbsp Tomato paste

Directions

  • Preheat oven to 180 degrees.
  • Whisk eggs cream, seasoning, tomato paste and cream together.
  • Add self raising flour mix then add all veggies, mix with wooden  spoon until well combined.
  • Line a rectangular baking dish with the diced bacon in a thick layer, pour egg and veggie mix on top.
  • Place into oven.
  • Bake for 40 minutes until golden brown.

Notes

  • Bacon and Veggie Slice is suitable for freezing for up to 4 months or keep an airtight container for up to 3 days in the fridge.
  • You can leave out the bacon to make this dish vegetarian.
